A family favorite one-dish meal with tender chicken and creamy orzo pasta, topped with a delicious buttery Ritz cracker and poppyseed crust.

Cook chicken in 2 cups chicken broth for 15 minutes in instant pot. Cut chicken up when done cooking. Add 2 cans cream of chicken. Add orzo or small pasta and cook 1 minute in instant pot, stir real well as orzo will stick. Mix in 1/2 to 3/4 cup sour cream and 1/2 to 3/4 cup Parmesan cheese. Season to taste with salt, pepper, and garlic powder. Optionally add half a cream cheese bar to make it extra creamy. Stir real well. Pour into a pam sprayed baking dish. Preheat oven to 375 degrees. Top with crushed Ritz cracker sleeve. Top with butter. Sprinkle poppy seeds on top. Optionally sprinkle Parmesan cheese on top for extra crunch. Cook for 30 minutes.
